Accordingly, millet flour was produced, and a standardised recipe developed for its use in the preparation of pancake. These pancakes were encoded and submitted for a sensory evaluation of 22 tasters. They gave their valuation on the colour, taste, texture, flavour, appearance and overall quality of each product following a hedonic scale of 9 points: 9 (I like extremely) to 1 (I don¿t like). The finding of the research indicates that the objectives of the had been achieved. However, having gone through the various procedures of testing the pancakes prepared from millet flour, the following were observed. The determinants (color, taste, flavor, texture and appearance) are a good technique that could be used to add value to it. The determinants as well as the packaging material used does not only attract consumers but also improved the quality, standard and hygiene of the product. Finally, it must be emphasized that, if all the necessary recommendations suggested from the findings of this research, it would advance the government of Ghanäs call for reduce importation of wheat, while ensuring food security.

The drink is a sweet-sour beverage made from the pulp of the indigenous African tamarind tree (Tamarindus indica). It has since ancient times been used for the treatment of inflammations, fevers, and alcohol intoxication. The juice from tamarind is rich in vitamin B3, potassium and is known to have cathartic, astringent, refrigerant, and antiseptic effects. This study seeks to assess the microbial quality of Tamarind drink sold within the Tamale metropolis.The study will be empirical, involving a total of 30 tamarind drink samples purchased from ten different vendors all over the Tamale metropolis. Using a range of general and specific microbiological media including nutrient agar, MacConkey agar, Potato Dextrose Agar, enumeration of the microbes will be carried out. Colonies will be tested for Gram reaction, and the biochemical assay will be used to confirm morphological characteristics of the colonies following microscopic examination at x400 and x1000 magnifications. Questionnaires will be administered.

Also, the industry contributes to 60% of new job possibilities while also making up 40% and 80% of Ghana's GDP and foreign exchange profits, respectively.Meat hygiene is most simply defined as the conditions and actions required to guarantee the appropriateness and safety of meat at all points in the supply chain for meat and goods associated to it. The majority of meat inspectors in underdeveloped nations and rural abattoirs lack the necessary skills, expertise, and information to properly assess the hygienic conditions of the organs, meat, and corpses of the killed animals. Although meat contains a high percentage of nutrients, it is frequently contaminated, which can cause food-related ailments in consumers.In addition, inappropriate handling of food is the main contributor to outbreaks of food-related diseases, including food poisoning. Raw meat is particularly susceptible to contamination. Most often, contamination occurs when food that doesn't need to be cooked, such salad, is prepared on a surface that was previously used to prepare raw meat without being properly cleaned.Before an animal is killed, it must be carefully examined, and there must be an inspection procedure going on as the animal is being killed.
