I thought I would love this book because I very much appreciate how America's Test Kitchen works and works at a recipe until they get it right. And then they explain what makes it right. When I saw that they published a vegan cookbook I jumped on Amazon and purchased it. I've had it for a two weeks, read it through, and tried several recipes. 100% of what I have made is the best version of the dish I have ever had. If I sat down at an expensive vegan restaurant in NYC and was served what I was able to made in my own kitchen I would be raving about it and planning a return trip. This book is excellent
